Naturally made with only six ingredients Scallion Oil Noodles (Cong You Ban Mian) is an incredibly humble dish and is an example of less is more. Originating in Shanghai, this noodle dish is the epitome of finding flavor in simplicity. Some things are just so classic; you’re never shocked by their credibility.
Scallion oil noodles are simple yet complex. You boil noodles, fry scallions, make a quick sauce, toss the cooked noodles, and top with the fried scallions.
Simply frying scallions infuses their fragrance into the oil. Then the oil is used to flavor the soy sauce added to the dish. Traditionally it’s served over simple wheat noodles, but you can use any noodles. The light and dark soy sauce contrast beautifully against the pale gold of the scallion oil, creating a satisfying flavor experience in every bite.
Your taste buds go on an adventure as this famous Shanghainese dish combines sweet, salty, and savory flavors in one mouthful. David and I were so impressed by this dish. It came together in under 15 minutes and required minimal chopping and prep.
